Our Third Breakfast Series features Elaine Lavery, Entrepreneur and Co-Founder of Improper Butter:

Elaine studied at University College Dublin where she graduated with a 1.1 in Business & Law in 2012. During her time at UCD, Elaine interned at Deloitte in Dublin and Goldman Sachs in London. Although she had an interest in finance, Elaine’s greatest passion has always been in food.

After graduating, Elaine decided to take a gap year to pursue her love of food. After a brief stint interning at Food&Wine Magazine, she secured a job as a chalet chef in the French Alps. It was here that Elaine began mixing butter with fresh herbs and seasonings to add flavour to food.

Upon her return to Dublin in summer 2013, Elaine approached college friend Hannah to launch the business which they named Improper Butter, Im being Irish for butter, and Proper, conveying their use of proper butter and proper ingredients.

Improper Butter is now listed across Ireland, and expanding into the UK through independents, John Lewis Retail and Ocado. On the back of their first major funding round, 2017 sees the expansion of the brand into garlic breads and prepared mashes.

In the business, Elaine oversees Sales, Operations and Finance.
